Approximately 1/4 cup of any kind of tofu will work as a substitute for a whole egg in many recipes. Just be sure to blend it well with the other liquid ingredients called for in the recipe. Use Silken tofu for desserts.
Tofu can also be used in “egg” salads and scrambles instead of eggs. Tofu scrambles are extremely versatile and can be made with whatever veggies you have on hand. The yellow color can be obtained by using turmeric.
